Banana egg pancakes are nothing new in our household. 1 ripe banana mashed with 2 eggs plus a sprinkle of cinnamon and a splash of vanilla, and voila! A grain free pancake! Because G was raised on them, she does not even realize that they are not ‘really’ pancakes. 

I don’t love them quite as much as she does. Until now….

Do you know if you add the tiniest bit of baking soda the texture totally changes??

Doesn’t it almost look like a ‘real’ pancake?? It tastes like one. And then add some salted ghee, sliced almonds and a drizzle of maple syrup, and yummm….

 

Or if blueberries are your thang, throw some fresh ones on for some ‘blueberry pancakes.’

It’s like eating at IHOP minus the tummy ache!

Ingredients
1 ripe banana, mashed
2 eggs
[1/4] tsp baking soda
sprinkle of cinnamon
splash vanilla
coconut oil or butter for pan
toppings of your choice

Instructions
1. Mix together the mashed bananas, eggs, baking soda, cinnamon, and vanilla.
2. Melt coconut oil, butter, or ghee in the pan over medium heat. Swirl to coat. Pour in mixture. Cook for 4-7 minutes until it’s dark golden brown. Use a thin spatula to flip. Don’t sweat it if it breaks. You will just have multiple pancakes. Cook additional 4-6 minutes until cooked through.

Notes
Flipping is the trickiest part. I find the super thin spatulas work the best and sometimes I even use two if the pancake is large.
The easiest solution would be to make this into smaller pancakes. But who needs easy?

These ‘pancakes’ are such a great way to indulge without the guilt. For mamas of littles, they are also a great gateway to eggs. If your little one does not have much interest in eggs, try these out. They will be getting some great protein all the while they are thinking they are just getting treat for breakfast!
