It is so great to be back blogging after my little break. My computer and I have not been getting along lately. I had a fantastic beet recipe for you this week and I even had an incredibly witty title for the post, Paralyzed with Beets (okay so maybe just clever to me, I spend of a lot of time alone and beets kinda scare me), and the point of the story is that the post never saw the light of the blogosphere. My computer ate the pictures. Technically, that may not be accurate, but that’s my story and I am sticking to it. Lucky for me, Junia, this week’s healthy blogger, has a beet in her recipe. You have no idea how happy that makes me….

Hi everyone,

My name is Junia and I blog over at Mis Pensamientos. I love clean eating, glutenfree baking, and schmancy entertaining for my friends and family.  One thing that I love is drinking a freshly pressed green juice every morning. It has transformed my health in crazy, dynamic ways: a radiant glow, revitalized digestion, more energy, weight loss, and cleansing.  I love to experiment with all different types of veggies and fruit combinations, but my basic formula is very simple: one fruit + tons of veggies + one detox item. Some examples of detox items would be ginger, beet, and lemon. Here is one of my favorite green juices that is delicious and perfectly balanced.

Beet Apple Green Juice

1 gala apple
1 beet, peeled
1 head of romaine heart
3 stalks of celery
handful of parsley or mint

 

 

 

 

 

 

Extra Tips on Juicing:
One of the most important things about juicing is buying fresh, organic produce. It ensures the purity of your green juice without any unnecessary toxins.  The basic premise of juicing is cleansing, so buying the organic produce is worth the extra buck. Also, I like to drink my juice within one hour of making it so that the enzymes are fresh!

Finding time to Juice daily:
Juicing is time consuming, but there are two small shortcuts that have helped reduce the prep and cleanup time in the kitchen, especially when I am on-the-go in the morning.  The night before, I wash all my produce for my green juice and put it in a tupperware, so that in the morning, the prep work is minimal.  With the vegetable produce bags that I get from my grocery store, I use it to collect all the pulp from the juicer so that cleanup is a breeze.  Cleaning the filter is the only part that requires the few extra minutes to brush and wash well.  My breakfast juice takes about 10 minutes from setup to cleanup! 🙂

Type of Juicer:
I use the Breville Juice Fountain Elite  and it works fabulously. The big difference I saw in the different models is the amount of juice that is extracted from the vegetables and fruits.  With the more expensive models, you will be able to juice green leafy vegetables and other light produce more easily. I started off with a $60 dollar juicer initially and it still works great according to my best friend who inherited it from me. 🙂
