I tried several times to write a cute introduction to these popsicles.

Then I realized that it was best if I just cut to the chase.

It’s hot outside.

It’s going to be hotter this weekend.

You need to make these popsicles.

I don’t even like popsicles and I have eaten four in the last four hours.

Popsicles for dinner, that’s healthy, right?

Do yourself a favor and take out a piece of paper and jot down the following:

1 small seedless watermelon

1 lime

1 container of fresh blueberries

Popsicle molds

(I am going to make the wild assumption you have sugar or agave nectar in your house). 

That’s your shopping list.

Watermelon and Blueberry Popsicles

from Eating Well magazine

3 3/4 cups of watermelon, cut into 2-3 inch pieces

juice from 1 lime

1 tablespoon of agave nectar or 2 tablespoons of sugar

1 cup blueberries

Put watermelon pieces, lime juice, and agave nectar/sugar in the blender and puree until smooth.

Confession: That was a money shot. I realized after I started pureeing that I had to do it in batches.

Guess that’s why people buy Vitmaix blenders…Puree at your own risk.

Divide the blueberries and place in your popsicle molds.

Pour watermelon mixture over blueberries.

Place caps on your molds. Make sure to leave some space at the top, it will expand when it’s frozen.

Freeze for at least 6 hours and up to 3 weeks.

Run your mold under warm water until you can pull out your popsicle.

I had trouble getting the final picture just right. The one above includes ingredients but it’s a little awkward. How does one take a foodie-tastic picture of a popsicle?

As you can see, I got a little impatient….

Yum.

These popsicles are the perfect balance of sweet and tangy. The watermelon puree is light and cool, and then you get the treat of the frozen blueberries.

I seriously had three for dinner tonight.

And did I mention I don’t even really like popsicles?

And the absolute best part of this: it’s real fruit. REAL fruit. As in, you actually buy fruit and end up with these frozen treats. No artificial colors, no corn syrup, no chemicals. Just fruit and a little agave nectar or sugar.

I think I might have one more for dessert….
