Meet Cardoon.

He showed up in the Choice box this week in my CSA.

I have been told he tastes a lot like artichokes. And for me, artichokes mean artichoke dip and I LOVE artichoke dip. So, of course I was happy to take two.

Then I got Cardoon home and realized that I may have bitten off more huge, thistley celery than I could chew.

I did a little research and found out that Cardoon was around in the days of Ancient Rome and is considered a Mediterranean delicacy.

I don’t know about you, but it doesn’t seem very delicate to me.

It seems that most recipes involve some kind of rich, cheesy sauce.

As you can imagine, this was not exactly what I had in mind. I mean, artichoke dip is one thing, but a main meal centered on rich, cheesy goodness? I am not so sure that would work here.

So, have any of you met Cardoon? Any recommendations?
