Scallions– You may have read about our scallion tragedy last week in our Chicken Pad See Ew post. We are determined to eat our scallions this week. In addition to adding them to salads and other dishes, I think we are going to try an adapted version of the Barefoot Contessa’s veggie dip.

Garlic Scapes: I am going to be honest, we may end up making Garlic Scape Pesto pizza again. It’s really that good. Except this time, I am going to take Amy’s advice and add some spinach. She commented that it can tone down the sharpness of the scapes.

Salad Mix, Head of Lettuce and Spinach: Salads! We had some last night and it was amazing. I have a salad every day for lunch and I wanted to share with you some not-so-ordinary toppings for your salads that I have discovered in the past few weeks.

  • Baked beans + Coleslaw mix + Shredded cheddar cheese + Crushed tortilla chips
  • Spaghetti + meat sauce
  • Veggie or regular BBQ + Shredded cheddar cheese + Coleslaw mix
  • Sliced chicken sausage + Cherry tomatoes/sun-dried tomatoes + Shredded parmesan cheese + Fresh basil
  • Marinara sauce + Shredded mozzarella cheese
  • Black beans + Corn + Salsa + Coleslaw mix + Crushed tortilla chips
  • Leftover hamburger + Shredded cheddar cheese + Coleslaw mix + Crushed tortilla chips
  • Blue cheese/feta cheese + Cherry tomatoes/sun-dried tomatoes/dried cranberries + Sesame sticks
