Happy New Year, folks!

As promised, here is our weekly meal plan. A few notes about the plan:

  • I generally don’t assign days to the meal. I have found that it’s nice having flexibility to a certain degree and making what we feel like eating and what we have time for.
  • We always plan for a few nights of leftovers.When I first starting planning meals, I thought I had to have different meals every night and Manatee got mad because he never go to eat any leftovers.
  • Each week we try to do at least one meatless meal, one meal with meat, and (new to 2013) one meal with fish.It helps when you are planning to have some guidelines, but I try not to have too many “rules.”

We are halfway through the week so some of these have been eaten. I will share at least one recipe in the meal plan and you can expect to see the (good) meals in later posts.

Overnight waffles. I made these on Saturday and then froze them for breakfasts all week. We will definitely have a post to follow. They have been amazing!

Tofu tacos. This is a Badger Girl/Manatee standard. So good and so easy.

Tuna patties with homemade coleslaw. This recipe was from a cookbook by the author of this blog. We had to sub in some crab for the tuna and I have to admit, they were not my favorite. The coleslaw, just shredded coleslaw mix + diced apple + mayo, was amazing and will be making more appearances in our meal plans and on the blog. Yum!

Slow-cooker chicken pasta sauce with mushrooms and peppers. This is a variation of an idea I got from Stephanie. At its most basic, it’s frozen chicken + sauce + 6-10 hours in the slowcooker = an easy and delicious batch of healthy comfort food. For this version, I added 3 medium sweet peppers (large dice), 1 [1/2] sweet onions (large dice), 16 ounces sliced white mushrooms, 28-ounce can diced tomatoes, and for my sauce, I used 2 jars of Trader Joe’s Marinara (no added sugar and no chemicals). We are having it tonight so I will report back.

Egg salad and guacamole on salad/in corn tortillas. We had a ton of hard-boiled eggs and I love guac in a corn tortilla. This was a light dinner that we enjoyed after going to a New Year’s Day party.

Veggie stuffed sloppy joes on portabella mushroom caps (instead of that pesky bun).

I have a feeling that homemade coleslaw may also make an appearance.

Banana Chocolate Chip Cookies. I have some overripe bananas and I found this recipe in the State Journal a few weeks ago. Will report back!
