Hello all! Our sunny, warm weather has been replaced with cool, rainy, and cloudy. Very different meals on the menu because of that! Lots of comfort food and meals for cozy nights inside.

I just bought a new cookbook, Sheet Pan Suppers, after reading about it in the local paper. The book is based on the premise that you can make your entire meal on a sheet pan covered in parchment paper or aluminum foil. This appealed to me because the ease of clean up, cooking, and most of the meals were grain-free.

I picked two meals from the book this week, but I can honestly say I didn’t pick the most tasty or mouth-watering choices in the book. It was more based on what I had leftover from last week. My goal at the end of every week is to have an empty fridge. Like so many people, we struggle with what we spend on groceries and what goes to waste. Since I have taken over this mentality, we have definitely cut down on our waste and I would like to think that extends to what we spend.

This is what is cooking this week at the Badger Girl household.

Roasted Crisp Topped Eggplant with Chickpeas over Zucchini Noodles and Whole-Wheat Pasta (Sheet Pan Suppers). I had leftover eggplant and zucchini. My freezer is stocked with chickpeas and I have marinara and pasta in the pantry.

Rotisserie Chicken, Coleslaw, Biscuits and Mixed Veggies. This will be a meal for my mom and Baby G since Manatee and I are doing a little date night.

Chicken, Black Bean, and Sweet Potato Enchiladas. I wanted something that would use the leftover chicken from the previous night and in the past, enchiladas have gone over well with G.

Fancy Tuna Melts (Sheet Pan Suppers) with Sweet Potato Fries and Mixed Veggies. I was attracted to these because you make them on naan bread and top them with mozzarella cheese which I had leftover from last week.

Take out Papa Murphy Veggie Pizza with Gluten-Free Crust and Veggie-Packed Pizza Rolls (recipe to be featured on A Life Well Fed this week). Manatee and I both love this pizza. G still won’t eat pizza but she will eat veggie-packed pizza rolls that are easy to throw together.
