My kryptonite has been, and will always be, chips. I love them. Some people crave chocolate and sweets, but I will take something salty any day.  With our renewed commitment to clean eating, I vowed to Manatee that I would not buy any pre-packaged chips or crackers.

It’s been tough.

This past Sunday, I was really hankering for some junk food. It’s something about football Sundays. I feel like the majority of the population is ripping into buffalo chicken tip, brats, cheese, crackers, and of course, chips.

A salad just wasn’t going to cut it.

Luckily, I had some mini pita pockets in the fridge.

Since I can’t buy chips, it’s become an obsession to make my own. I am determined to make the perfect chip.

This batch came pretty darn close…

Spicy Citrus Pita Chips

Juice from 1 lemon
2 tablespoons canola oil
1 tablespoon Sriracha
1/2 teaspoon Cumin
1/4 teaspoon salt
5 mini pockets, cut into quarters*

*I bought the mini pockets on accident. Oops. You could also use 4 regular sized pita pockets, cut into sixths

  1. Preheat the oven to 400 degrees.
  2. Mix lemon juice, oil, Sriracha, cumin, and salt in a small bowl.
  3. Dunk the pita pockets in the sauce and place on a wire rack on top of a baking sheet. 
  4. Bake for 15 minutes. Flip chips. Bake for an additional 5-10 minutes. Check them often. It’s a fine line between crisp and burnt.

Recipe Review: This batch was a learning process. When I first put them in the oven, I just put them on a baking sheet.

This was fine until I went to flip them and discovered that they were totally soggy. Way too much sauce! But I wanted the flavor so I wasn’t ready to give up. I found a wire rack and re-positioned the chips on the rack.

Problem solved! After ten more minutes in the oven, they were super crispy AND super flavorful.

Warning: these chips will bite back. They are SUPER spicy. Like need-a-swig-of-beer-after-you-take-a-bite spicy. Or in other words, perfectly spicy!
