An apple a day….

You know the saying, right?

An apple a day keeps the doctor away. Sound familiar?

I have been listening to Jim Rohn lately and he does a great talk on ‘An apple a day.’ He asks, What if that were true? What if an apple a day was all it took? What if it was that easy?

So, I have been trying to eat an apple a day.  And you know? It impacts more than just eating an apple every day. It makes you look at other food differently. It makes you look at wanting to choose exercise, to make the healthy choice. Something so small does add up.

But before I get too motivational on you, let’s remember: this is a food blog. So, if you are going to eat an apple a day, how do you jazz it up?

Clean Eating Challenges

In my quest for an apple a day, I found the answer to some other lingering questions about clean eating.

One of the hardest things about giving up processed food was giving up cereal. Both Manatee and I had a pretty serious cereal habit. He loved Fiber One while I preferred Crunchy Corn Bran. We ate it in the morning, we snacked on it at night, we were cerealholics. And when I tell people about writing clean recipes, two things always come up: breakfasts and snacks.

What can I eat in the morning that’s as fast and easy as cereal?

If you don’t eat processed foods, what do you snack on?

Here is your answer.

Fruit & Nut Salad

Dice an apple.

Add a handful of walnuts.

Throw in some raisins.

Shake or toss to combine.

Voila! A healthy snack or meal at your fingertips!

Recipe Review:

I had a hard time naming this because I eat it for breakfast, lunch, and as a snack. Tonight I will eat it for dinner on my way to work. This is my go-to everything and go-to-everything wasn’t a very specific title for a recipe.

I love how the sweet raisins offset the salty walnuts and the crisp apple. You have texture, you have taste, and this is incredibly healthy. What more could you want?

How about we make it even easier to make?

Manatee scoffed at me when I bought an apple slicer/corer. “Don’t we have knives?” he asked.

Smart aleck.

This cuts down on time so it is one of my best friends. It’s $7 and well worth the money. We use ours once a day.
