Updates:

Clean Eating

For the next few weeks, I will be dedicating more time to the look and feel of the blog. So if you hear frustrated screams coming from the Greater Madison area or see any airborne Mac laptops, that would be me learning WordPress.

I will also be adding a section to the blog on clean eating. Manatee and I define clean eating as eating whole foods that include lean proteins, fresh produce and whole grains. This does not include any processed foods, white sugar, white flour or really anything that has ingredients that you can’t pronounce.

I am going to be doing research on this topic and will share with you what I learn. There are some amazing blogs dedicated to clean eating and it’s been really fun to read more about it.

Marathon training

I am training for the Twin Cities marathon in October. Lately, that has meant that I am getting my butt kicked on a weekly basis. Every weekend I have a long run to do for my training. Today I ran 15 miles and I bonked at mile 10. For those last five miles, I thought about what I ate this past weekend and can see why I was dragging. I also thought it may be beneficial to do some research on how to properly fuel yourself for endurance events. I will also be sharing this information with you guys just in case there are others who are also training or thinking about training for a big event.

Recipes for this week:

This week I will be making the following dishes:

  • Panzanella salad
  • French lentil salad
  • Lombardino‘s spring salad
  • Mussels in white wine sauce
  • Something rich and chocolatey for a picnic with my teenage nieces

I haven’t picked out the chocolate dessert yet. Any suggestions? It needs to be portable and decadent. I would love to hear your ideas.
