I think it’s safe to say that I have become a little obsessed with homemade popsicles.

Especially with the recent unseasonably warm weather, I just can’t seem to get enough.

Lucky for you, I have taken this very seriously. My goal with every recipe is to have as little as sugar as possible, the most fruit flavor, and the smoothest texture.

And my ultimate goal is to get rid of the box of ‘Jesus’ popsicles in our freezer. In March, Manatee told me he was on his last box of store-bought popsicles. “When this box runs out, I PROMISE that I won’t buy another box.”

Oddly enough, he’s still eating store-bought popsicles. That last box seems to be multiplying, kind of like what Jesus did with those fishes and loaves. There is some kind of miracle happening in our freezer. As much as I would love to build an altar in our kitchen and host various religious pilgrimages, I have a sneaking suspicion that there may be foul play involved. Foul play that involves secret trips to the grocery store and clandestine exchanges with store clerks.

I seem to think if I could just have the right kind of popsicle for Manatee, the miracle would end.  He will embrace this new homemade version and walk away from the old faith.

Only time will tell…

In the mean time, the good news is that I don’t have to share my creations. And for this particular popsicle, that makes me very happy indeed.

Strawberry Peach Popsicles

32 ounces of fresh strawberries, hulled and quartered
3 peaches, pitted and quartered
juice of 3 limes
1/2 cup water
2 tablespoons agave nectar

Puree strawberries, peaches, and lime juice in blender. You may need to do multiple batches.

Strain fruit puree in a fine mesh strainer. Stir in agave nectar and water.

Pour into molds. Freeze for at least 6 hours.

Recipe Review:

Sweet, tangy, smooth, and refreshing. I think that pretty much sums up these popsicles.

It never fails to amaze me how little sweetener you need for homemade popsicles. I would even say that you could get away with only 1 tablespoon of agave nectar depending on the sweetness of your berries. Manatee might like his ‘Jesus’ popsicles, but give me these guys any day.

I love how I can taste all of ingredients and even better, can identify all of the ingredients. Now if I could just figure out a way to multiply them, I may be able to build an altar of my own…
