Last week, I found myself at home, hungry, and with not a heck of a lot of time. I bet that never happens to you, right?

I opened the fridge and spotted some white beans leftover from Lombardino’s recipe testing.

I opened the pantry and found a package of sun-dried tomatoes. We always have a few packages because it is one of our favorite snacks.

As my eyes trailed over the counters, I saw a lemon and immediately thought of all of the great Citrus Love posts that have been circulating this month.

Then my eyes fell on the Magic Bullet I had left out from my morning smoothie.

Gears began to turn and I had an idea for a great lunch.

 

White Bean and Sun-Dried Tomato Spread

1/2 Ezekiel english muffin or piece of whole grain bread
1 cup white beans*
1/4 cup sun-dried tomatoes
1 clove garlic
2 tablespoons lemon juice (juice from 1/2 lemon)
1-2 tablespoons vegetable broth

*I had leftover white beans from recipe testing and they were kept in the liquid so I used some of that liquid. If you are using canned beans, add vegetable broth.

  1. Toast english muffin.
  2. Put white beans, sun-dried tomatoes, garlic, and lemon juice into small blender.
  3. Puree and add vegetable broth as needed. You want this have a thick consistency but you also need some liquid so that it can blend.
  4. Spread white bean mixture on english muffin. This goes great with a simple spinach salad dressed with lemon juice (from the other half of your lemon).

Recipe Review: 

This turned into a light yet satisfying lunch.

 

The sun-dried tomatoes give the spread its richness and it’s balanced with the creamy white beans and brightness of the lemon.

I highly recommend serving this with spinach and lemon. I forgot how refreshing it can be to just use a splash of lemon juice instead of dressing.
