Happy What I Ate Wednesday!

What I Ate Wednesday (WIAW) is a celebration that we all eat. Every Wednesday, bloggers around the world share what they eat in one typical day.

During the month of March, WIAW is going green. I shockingly didn’t eat much green stuff, so thought I would share with you a preview of the 2012 Badger Girl Garden. 

As many of you know, I do not have a green thumb. But what I lack in talent, I make up for in sheer determination.

This past weekend, my neighbor and I took the first steps towards our summer gardening. My neighbor, Erika, is the queen of tomatoes. So all winter, I have been after her to include me in her tomato planning. After a few glasses of wine, we decided we were ready to enter a new frontier of gardening: growing from seeds.

Erika is a girl after my own heart, overly ambitious. So when we went to the gardening store, it was only natural that we got a little excited by all of the varieties of tomatoes.

When we got back home, we realized that we had committed to 10 varieties of tomatoes. And I did I mention that Manatee and I are also doing a full share CSA this summer?

But at the same time, given my track record at gardening, I am not confident we will be planting 10 varieties of tomatoes this summer.

I am starting to think about it like a horse race. As the seeds grow (or don’t grow), I will keep you updated with the race. Here are the contestants:

So, you’re probably thinking: Well, great Kimberly, what about this is green?

Well, Manatee and I are determined to not buy produce this summer. The CSA is great but it never covers all of our salad needs, so we will be growing our own lettuce. This past weekend, I also planted seeds for two varieties of spinach, Olympia and Tyee. 

And did you know that there are 350 seeds in each packet for spinach? I am hoping of the 700 seeds I planted that at least a few plants make it.

Okay, now back to our regularly scheduled program: What I Ate Wednesday!

Breakfast

I figured you were probably tired of looking at my shakes, so instead I decided to show you the raw ingredients: Almond milk, frozen bananas, almond butter, frozen blueberries, ground flaxseed, and chocolate Shakeology.

When I was on vacation last week, I made some Shakeology for my mother. She LOVED it and is going to be ordering it when they return to the tundra. She told me that my new tagline should be, ‘Even my mom will drink it.’ My mom’s tastes are equal to that of a picky three year old, so for those who know her, it’s quite a selling point. 🙂

Lunch

Calling this a lunch may be stretching it. It was more of a ‘foods that I am really craving at midday.’ Roasted red pepper hummus, carrots, hard-boiled eggs (I had another one after I took the picture), and leftover sweet and spicy tofu. 

And then for dessert, I had a treat from my foodie penpal….

Dried peaches.

Has anyone else had these before? I am totally addicted to them!

You know it’s too bad that WIAW didn’t go orange this month…

Snack

I spent the afternoon doing some spring cleaning and unpacking from our trip. I decided another treat was in order to keep me in a happy mood. Once again, I delved into my foodie penpal package (Thank you Laura!).

Dinner

I had to make something quick, fast, and filling before I went to assist a cooking class at night. This did the trick!

Night Snack

After I got home from class at 10, I was a little hungry and wasn’t quite ready for bed so I decided to have a little snack…

Celery and Almond Butter.
