Hey folks! It’s that time again and unlike last week, I have managed to avert all possible crisis…..so far.

WIAW, or What I Ate Wednesday, is a weekly blogging event led by Jenn at Peas and Crayons. Bloggers all over the world document a day in the life of their eating habits. I think it’s a great way to learn about new snacks and meal ideas while also being held accountable (when you have to photograph everything you put in your mouth, you can’t help but make better choices).


This week’s theme is healthy, holiday eats. I am taking a little twist on this. I will save my favorite party treats for another post. I am going to include a recipe for those oh-my-gosh-the-tree-isn’t-up-and-I-don’t-have-any-more-clean-underwater-and-I-have-a-deadline-and-a-party-coming-up days.  Please tell me I am not the only one who has these type of days…..

Breakfast

Lately, I have been obsessed with eggs. Today, I changed things up from my usual egg whites and had a hard-boiled egg with a half of Ezekiel Sprouted Grain English muffin. I also had some beautiful fruit that I made into a nice little fruit salad.

So far, my only pregnancy craving has been watermelon. We must have watermelon in our house at all times. I snack on it throughout the day and it keeps from eating (too many) sweets.

Morning Snacks

My morning was not perfect in my snacks. I indulged in my incredibly high maintenance Starbucks latte: soy decaf Pumpkin Spice latte with half theflavoring.

When I found out I was lactose intolerant and was moving to California, I decided that I had to reduce my coffee costs. Cutting it out was not an option so I rationalized that if I could get my lattes without the flavor, I would be saving enough money to feel okay about it. It took awhile, but I trained myself to like it without any added flavor. Now, if I want any flavoring, it tastes too sweet so I have to get it reduced. I annoy baristas everywhere, especially since I am always sure that I didn’t really tell them the right order so I am always double-checking with them. Luckily, I don’t get lattes often….

As I was driving back from the hospital, I popped a peanut butter filled chocolate in my mouth. It was worth the guilt. Yum.

At home, I had the other half of my English muffin with some natural peanut butter.

Afternoon Snacks

I didn’t really sit down for lunch, but did snack on some veggies, multigrain crackers, and hummus.

Later, I had leftovers from my all-time favorite meal: tofu tacos. Let’s take another look at that gorgeous taco.

Yummmmm…

To make tofu tacos: cut a block of tofu into squares and put in a medium saucepan. Cover with one jar of salsa. Heat over medium heat for 10-20 minutes, letting it simmer and reducing the salsa. Enjoy with corn tortillas, Greek yogurt, avocado, and shredded lettuce. We eat this on a weekly basis.

Dinner

This week has been crazy so I knew I needed something I could throw in the slow-cooker and then not worry about. This is another go-recipe in our household. Essentially, it’s frozen chicken + a sauce of your choice + any veggies you want to add. You throw it all in the slow cooker and let it cook on high for 8 hours.

For our version, we used frozen chicken breasts + Not Ketchup. I’m not sure if you remember when I tried to make ketchup. For those who don’t, it was a complete disaster and I don’t wish it on anyone so no one, and I mean no one, should make Not Ketchup. It’s good, but nothing is that good.

For veggies, we went all out: cauliflower, peppers, onions, black beans, and corn.

We ate it over spinach with Greek Yogurt and whole wheat naan.

What I love about this recipe is you can customize it so much. Try a package of frozen chicken breasts with a jar of pasta sauce, two jars of salsa, or some barbeque sauce. Just make sure your meat is covered totally and there’s enough liquid for cooking all day. The meat is super tender and you don’t have to thaw it out. I also love adding veggies to it to make it even more of a balanced meal.
