Growing up, vegetables were canned and herbs were dried. There were two kinds of cheeses: Kraft singles and, for those special occasions, Colby. Sandwiches were made of baloney, mayonnaise and white bread. And if it was green, it better be a vegetable or why on earth would you eat it? I grew up in the eighties, when processed foods were the norms and quicker was always better.

Fast forward thirty years and I am in a new world. Gone are the casseroles filled with cream of mushroom soup because I am lactose intolerant. Canned vegetables have been replaced with my CSA (Community Support Agriculture) shares. Forget Hamburger Helper because my husband and I are on a quest to completely eliminate processed foods from our diet. Do I totally know what I am doing? I wish.

Julia Child once said: “The only real stumbling block is fear of failure. In cooking you’ve got to have a what-the-hell attitude.” Julia and I agree on this. What’s the worst that could happen? Dinner doesn’t turn out and you order Chinese: Steamed vegetables with brown sauce on the side, no rice and steamed dumplings for the really bad days (not that we order that often or anything).
