I am in love with these cookies.
Chocolate + White Chocolate + Almonds + Cranberries
= A Badger Girl Dream
And even better? These cookies are kinda good for you (in the realm of the baking world). No eggs, no oil, and whole grains. Gotta love clean and vegan baking!
Double Chocolate Cranberry and Almond Cookies
Modified from Veganomicon’s Chocolate-Chocolate-Chip-Walnut Cookies
2 cups whole wheat pastry flour
2/3 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup applesauce
1 cup evaporated cane juice
4 teaspoons ground flaxseeds
1/2 cup almond milk
2 teaspoons vanilla extract
1/2 teaspoon almond extract
3/4 cup dried cranberries
1/2 cup slivered almonds
3/4 cup white chocolate chips
- Preheat the oven to 350 degrees.
- Line two cookie sheets with parchment paper or a silicone mat.
- In a medium bowl, mix together flour, cocoa, baking soda, and salt.
- In a large bowl, mix together the applesauce and evaporated cane juice.
- Add ground flaxseeds, almond milk, and vanilla. Mix well.
- Fold in the dry ingredients in batches.
- Add cranberries, almonds, and white chocolate chips.
- Mix until combined.
- Using a scoop or a spoon, scoop out dough onto prepared cookie sheets.
- Bake for 12-15 minutes. Remove from oven and let cool for 5 minutes and then transfer to wire racks.

These cookies just make me happy.
It is a simple recipe with all my favorite ingredients and with my clean eating tweaks, they really are not that bad for you.
I sent some to my foodie penpal and sent some to Manatee with him to work (over two dozen cookies only lasted two hours in their breakroom).
And of course, I kept some for myself.
Because with all my favorite ingredients,
how couldn’t I keep some for myself?
