I have no idea why I bought my first leek but I remember it was in California and I made an absolutely terrible leek and potato pizza. I remembered being totally puzzled by this over-sized scallion and I couldn’t get over how ridiculously dirty it was. Over the years, I am still trying to find the best recipe for leeks but at least I know how to clean the darn things.

Start out by cutting the nubby ends off the leek.

 

Cut a slit down the length of the leek.

 

Peel off the layers one by one.

 

Fill your sink up with cold water and soak the leaves. Swish them around a few times. I usually let them soak for 15-20 minutes.

Pat the leeks dry and chop as you wish.

As you can see, I had a ton of leeks. Check back later this week to see what I did with them.
