When we went to Texas, we had to clean out our fridge before we left.

I have to admit that it was very liberating.

We are now trying to clean out our fridge each week, by making sure we eat all of our fresh produce and perishable items. I want to share with you one of our Clean the Fridge Meals.

Black Beans and Mango

This was what we needed to eat one night.

Most of this was going to be sucked into an omelette, but try as I might I had a hard time imagining the mango in the omelette. So I decided to branch off and make a South American treat, black beans and mango.

I first had this with my good friend, E. She whipped up for me when I was unemployed and staying with her in Chicago. It was the perfect summer comfort food. I hope you like my rendition.

Ingredients:

1 tablespoon oil
1 sweet pepper, large diced
1/2 large red onion, diced
1 mango, diced
1/2 cup carrots, diced
1-2 tablespoons Cumin
juice from 1 lime
juice from 1 lemon
1/4 cup green onions, sliced
1/4 cup cucumbers, diced

Heat oil in a frying pan on medium heat.

Add carrots, onions, and peppers.

Cook until carrots are tender.

Add black beans, half of the mango, and cumin. Cook until heated through.

Stir in remaining mango, lime juice, and lemon juice.

Serve over lettuce. Top with cucumbers and green onions.

I loved this. Like ‘can’t-wait-to-make-it-again-loved’ this.

Manatee hated it.

We agreed to disagree.

It is traditionally served with an egg on top. We had an omelette with this meal. In true Badger Girl/Manatee fashion, I hated the omelette while Manatee loved it. I didn’t include the pic because it didn’t look too pretty and (in my opinion) didn’t taste too pretty. Trust me, you aren’t missing something. However, if you don’t try this black bean and mango dish, you WILL be missing something.
