I do need to apologize for the tardiness of this post. Let me explain. Yesterday I went up North (to Central Wisconsin) to do my 20 mile run with my BFF Kristen. I got back mid afternoon and found our CSA share on the counter. I opened the bag and I pulled out the biggest, ugliest beet I had ever seen. Between that and the run, I was totally overwhelmed.

After a good night’s sleep, I was ready to face the beet again and subsequently ready to write my post.

Beets
Carrots
Watermelon
Potatoes
Squash
Tomatoes and Peppers
Sweet Corn

Beets– Seriously, what did they do these beets? It’s bigger than the watermelon!

I like beets. I like beets a lot, but I am really intimidated by a beet bigger than my head. How do I cook it? Will it fit into any of my pots? I could make enough pickled beets to get me through til Thanksgiving, I guess. Or I could make a beet-0-lantern. We’ll see. It’s going to take a few more days to gather enough courage to do something with it.

Carrots- Carrots have been my new favorite ingredient in just about everything. Dice them up and throw them in BBQ, spaghetti sauce or even taco meat. They give a great sweetness to a salty dish and add some extra vitamins so those guilty pleasures don’t feel as guilty any more.

Watermelon- Slice it up, add some salt and enjoy. That’s the Manatee method to eating watermelon.

Tomatoes and Peppers- Manatee and I have discovered a new Fall favorite dish that we will be eating again and again as long as we have fresh tomatoes. Check it out here.

Corn– Grill it, boil it, eat it raw on salads. We can’t get enough of this sweet summer treat.

Potatoes– We have potatoes coming out of our ears. I actually forgot about the last bag until I put this one away. Oops. And tonight we leave for vacation so next weekend may be a potato party. What’s your favorite potato recipe?
