Happy Sunday folks!

As promised, here is our meal plan for the week. I am keeping it short and sweet this week because I have several posts planned for this week including a trip to the opera and at least one recipe (hopefully more!).

Here is what we are eating this week:

Veggie Flatbread: I bought some pre-made pizza crusts from Gino’s deli in preparation for the baby and the need for quick meals. I love buying these because they are cracker thin and made with all whole food ingredients. Will be drizzling on some olive oil, Italian seasoning, and then topping with veggies (asparagus, Texas sweet onions, red peppers, and mushrooms) and cheese. Super simple, super fast, and super good.

Picadillo– I have the weirdest craving for this salty and sweet Cuban meal. We will either eat it in lettuce cups, or if I am really ambitious, with (dried) black beans and brown rice.

Veggie Curry Something– This is another crazy week. We haven’t had curry in a long time, so I plan to make a big batch of some version of this curry favorite.

Boiled Chicken Breasts– I will be boiling up some chicken breasts for quick snacks, quesadillas, tacos, and chicken salad.
