Did anyone else feel like they totally missed February?

It was expected, I mean it is the shortest month after all. But I wanted to hang on to February a little longer than usual because for me, March means birthing classes, April means showers, and May means a new baby. Wouldn’t you want to hold on to February a little longer?

For those of you who are new to the blog, each week I post our meal plan on the blog to help hold me accountable for planning meals and so you know what to expect in the realm of recipes in the weeks to come.

In terms of this week’s posts, I will be reporting on my incident with Julia Child’s roasted chicken (and yes, it was an incident, not a meal) and a side dish that will make you swoon (there’s a new ingredient trinity in the Badger Girl household).

I will also share with you my new obsession with infused sparkling waters. Here is a preview:

Meal Plan:

Sparkling Berry Water: I have been craving Diet Coke majorly in the last few weeks so I was thrilled to see Michelle @ Peachy Palate tweet about infusing sparkling water with frozen berries. I have been experimenting with different berries and ratios and will have a recipe ready for you later this week. I should point out that I don’t even like sparkling water as a general rule, but I am loving this stuff. As a big thank you to Michelle, I hope you go and check out her blog.

Badger Girl Granola 6.0: I will be making another batch of my favorite granola.

Along with Diet Coke, I have also been craving granola soaked in almond milk. Unwilling to buy cereal, especially after this last recall, I am determined to make my own batch, maybe with a few tweaks. And no, I have not forgotten my promise of homemade bran flakes. It’s still on my list of things to do, I just need the time.

Clean Graham Crackers OR Peanut Butter and Jelly Cupcakes: One of these must be made so that I can have a homemade vehicle for peanut butter. The spoon doesn’t always cut it.

So far the theme of this week has been my pregnancy cravings…..Now onto the meals:

Beefy Lettuce Wraps: I found a recipe from a 2011 Clean Eating Magazine for Greek-style beef lettuce wraps. Think ground beef, artichoke hearts, mint, and sweet peppers. Yummm…..I haven’t been able to find the recipe online for a link, but I will keep you posted on them and share the recipe if they are blog-worthy.

Chicken Vindaloo: I gave Manatee the choice between this Indian chicken dish or chicken with oranges and balsamic vinegar. I was pleasantly surprised when he picked this. The recipe is from Fine Cooking magazine and can be found here.

Tofu Tacos: You know we love them. 2 jars of salsa simmering with pressed tofu, add some steamed broccoli and raw spinach, means you will have a very happy Badger Girl and Manatee.
