Hello all-

Checking on Week 3: We did better than Week 2, aka didn’t totally ignore the plan, but didn’t totally stick to it.

Best meal of the week: Stephanie O’Dea’s KFC Inspired Chicken. I was shocked. I want to love roast chicken, but until now, I haven’t been impressed with any recipe. This will now be my go-to roast chicken recipe. I removed the skin before roasting, which I feel like is a foodie sin, but it really worked for us. We normally don’t eat the skin, and this way all those great spices were right on the meat. I didn’t add any liquid to the slow cooker and it was amazing how juicy the chicken was. I admit, I added some cayenne and chili powder to the recipe and I will probably continue customizing it, but overall a winner.

I should add, I don’t even know the last time I had KFC chicken so I can’t speak to if it tastes the same.

Another note: It’s really hard to find organic chicken in Madison for a decent price. We were at Costco this weekend for some other things, and I found organic chickens for approx. $10 a piece. Now I love buying local, but those cost $20 and up. Do you know of any other places for good prices on good chickens?

The other clear winner of the week: homemade potato chips. They were so good, I will share the recipe with you later this week!
