Katherine is the author behind mangoes and mojitos. I met her at the UW-Madison Writer’s Institute last spring and I have really enjoyed watching her create her blog and emerge as a writer.

When Katherine and I met, she told me about her lunch project. With three kids, two of whom are incredibly picky, she was struggling to balance her foodie longings and what she needed to prepare to sustain her family at dinner. Rather than give up and succumb to a daily diet of bland meat and PBJ’s, she decided to reclaim lunch. While the kids were at school, she would make herself a mid-day feast worthy of any royalty, or at the very least, a woman with a fine-tuned palate.

Her recipes are filled with complex flavors made with simple ingredients, but that’s not why I tune in regularly to her blog. Above everything else, Katherine is a writer. She can create vivid images, sensations, and emotions through her prose. Reading her blog is like pressing the pause button and taking a deep breath.
