Happy What I Ate Wednesday! 

What I Ate Wednesday is a celebration of the fact that everybody eats. This week WIAW is the admission that I am not perfect. I would love to tell you that my diet is perfect but it’s not. Especially when Manatee and I are scrambling to do two weeks of work in one week because we are getting ready for vacation. And when you work for yourself, paid vacation is the stuff that dreams are made of. In our reality, we will probably do some work on vacation but before we leave, it means lots of long nights, short tempers, and little sleep. Lucky for us, it does not mean a lot of bad food.

Breakfast:

Veggie Egg White Omelette with Ezekiel English Muffin and Ketchup

We had some leftovers from homemade vegan pizzas the night before (and yes, I promise I will share the recipe in the next week!) so I used the asparagus and red onions in the omelette. I also added sun-dried tomatoes and spinach.

This was worth a close-up. The omelette was so easy to throw together. I sauteed the asparagus and onion for 2-3 minutes. I added the sun-dried tomatoes and spinach and sauteed for an additional minute. Then I just added my egg white mixture (egg whites, cold water, garlic powder, and pepper) to the pan and proceeded with business as usual.

And of course, I needed a ‘dessert’…

Morning Snacks:

Badger Girl Granola.

Yes, I have my own granola. I received it in my last Foodie Penpal package. It is amazing and I am at the point where I am trying to ration it.

Lunch:

 

Chocolate Shakeology with coconut oil (a new obsession), flax seeds, chocolate Shakeology, frozen cherries, and un-sweetened chocolate almond milk.

This was just okay. It was very filling and I ended up only drinking 3/4 of it.

More Snacks:

I knew Manatee wasn’t going to be home until late so I knew I had a lot of time before he got home. I started with a piece of leftover vegan pizza. The leftovers weren’t as pretty as the original, so here’s the pic of the pizza fresh from the oven….

Now imagine one piece of it, cold and leftover. Not quite as pretty looking, but still pretty good tasting.

In case you are curious, it’s tofu-cotta with asparagus, mushroom, and red onion pizza. 

That held me over for awhile, but I still hadn’t heard from Manatee and my stomach was rumbling again, so I had another snack.

Chili and Lime flavored Pistachios. 

Dinner:

Finally, the main event!

We are trying to eat our way out of the fridge. This is difficult no matter what, but when you are recipe testing, this is downright challenging.

We had lots of asparagus and aoli leftover, not to mention a quart of butternut squash soup. Then, when I had to run to the store (for recipe testing), I couldn’t not leave with a bag of Brussel sprouts because I really am that obsessed. I can’t get enough of them!

Here is the whole shebang and yes, we ate on TV trays. Manatee didn’t get home until late and wanted to catch the end of the Badgers game and well, I decided the poor guy needed a break.

Baked Mahi Mahi, roasted vegetables, aoli, spinach, butternut squash soup, and white wine.

Let’s break that down, shall we?

The butternut squash soup is a bisque style soup with Marsala wine, nutmeg, and cayenne pepper topped with creme fraiche.

The vegetables are my favorites and my mother’s least favorites: asparagus, Brussel sprouts, red onions, and mushrooms tossed with olive oil, lemon zest, and lemon juice. The recipe will be featured this month. I am super excited about it.

The fish was okay. Manatee and I decided that it really was just a vehicle for the aoli (a product of recipe testing).

Dessert/Evening Snack:

Alright, now all of you know my kryptonite: red and black licorice, preferably from a bulk bin or candy store.

I know it’s bad for me but sometimes I just don’t care.

We also decided that if we were going to work at night all week then it would probably be okay if we had a glass of wine while we did it.
