Last week I learned an important lesson, when I don’t plan, I go to my roots and survive on this:

Yes, even though I did pull leftovers from the freezer and promised to share my culinary creations, I ate cereal almost every night last week for dinner. Manatee enjoyed the freezer food, it was too much for me.

Lesson learned.

Meal Plan

This week, I have spent a lot of the week working on the nursery with my mom so we relied on quick and easy dinners like:

Ham and cheddar panini: Made with whole wheat Tuscan bread and grilled in my foreman grill.

Parsnip cream over toast with steamed broccoli: This was another throwback to the cream of mushroom soup over toast my mom would make when I was little. We had parsnip cream left from Lombardino’s recipe testing. I added some chopped sun-dried tomatoes to add a little color, but it was comfort food at its best. And of course, it was all served over a bed of spinach.

Chinese delivery with a salad: Our go-to order is steamed vegetables and chicken with sauce on the side. We generally throw the veggies and chicken over a salad and don’t feel too guilty about giving in to takeout.

Tofu tacos: Heat a jar of salsa in a medium saute pan, add cubed tofu, and heat through. Throw it on top of a salad with avocado and Greek yogurt or fold it into some corn tortillas.

Nothing too special this week, but by writing it out at the beginning of the week helped me stay out of the cereal and into more healthy options.

The Nursery: A Work in Progress

I thought I would share a few preliminary shots of the nursery. As I mentioned, my mom has been here this week and we have been hard at work. There is still a lot of work left to do, but we have made a lot of progress.

Our theme for the nursery is letters and numbers. The colors are yellow, white, and dark brown.

I am not a crafty person and I didn’t plan to make as much as I did. I had a lot of trouble finding nursery decorations that didn’t involve small animals or anything else too themed or cute. These projects were hard to mess up (and believe me, we tried), and I’m really happy with the results thus far.

*These pictures were all taken with my i-phone. Once the nursery is finished, I will take some pictures with the good camera to properly show it off.

We ordered the letters and numbers un-painted from Etsy and used 3M velcro interlocking tape to hold the letters and numbers on the wall.

We had to do some rearranging after the numbers were up and the numbers came off without removing the paint and seem sturdy on the wall. I give it a thumbs up.

We used clear fish line and small golden hooks to hang these from the ceiling. This is the mobile above the crib. The poms were easy to make, but if you do attempt these at home, I recommend tying on the fish line so there are two ends to make it easier to hang. Trying to loop and knot one line, especially after a long day of painting, was not my favorite activity in the world. We had to take several breaks. Good thing my mom has a good sense of humor.
