Hello!
This is going to be a quick and short post. Wanted to let you know what we are eating and give you a glimpse into life with a toddler.
I said all of these things before 9 am today:

“Did you just take your pants off?” (at breakfast and she did)

“Don’t put your fork there.” (also at breakfast) and then “That’s not how we comb our hair!”

“You have lost your flushing privileges!”

“Don’t eat Mama’s yoga block. She needs it right now.”

Yup.

Life with a toddler.

 

Here is what we are eating:

Monday: Marinara with lots of Veggies, Pasta, and Chicken Sausages:

Whenever we make pasta, I try to sneak in as many vegetables as possible. In addition to making zucchini noodles with our spiralizer, I threw some cut up broccoli in the pasta water for the last two minutes. I also added eggplant, peppers, onions, and mushrooms to the storebought sauce. I love how meaty the eggplant makes the sauce! I had some bread that was getting stale so I cut it up, slathered on butter, garlic powder, and Parmesan cheese, broiled it and voila! Poor man’s garlic bread.

Tuesday: One Pot Taco Casserole

You’ll note that lack of corned beef in this week’s meal plan. The best laid plans….

Actually, my tradition is to eat Mexican on Saint Patrick’s Day because whenever I have gone out, I have ended up at Mexican places because I don’t have the patience to wait at the Irish places. I am trying this recipe from a different blog.

Wednesday: Date night!

Baby G and babysitter will eat Jimmy John’s while we go out.

Thursday: Leftover Taco Casserole

Friday: Homemade Veggie Burgers….or take out Fish Fry

I am planning to make homemade veggies burgers from this book. I love them and it makes a ton so I can stock my freezer.
