I have talked before about roasting peppers, but I wanted to add some updates.

Roasting pepper is such an easy thing to do and can really save you money.

A few simple steps and you can have sweet and rich roasted peppers to throw into a salad or make some yummy homemade hummus.

Line a rimmed cookie sheet with aluminum foil and cover with peppers. 

Adjust your oven racks so that the top rack is as close to the broiler as you can get.

(If you have a drawer broiler, then skip this step).

Place pan of peppers in oven (or broiler)

and set the oven to Broil.

Broil for 4-6 minutes. Flip the peppers and broil an addition 4-6 minutes. The skins should be charred.

Place peppers in a bowl and cover with plastic wrap. Let cool until you are able to handle them (10-15 minutes).

This is the tough part: when they are cool, you need to remove the stems, seeds, and skins. Use a paper towel to wipe them away. Do not rinse them! If you do, you lose a lot of the flavor. 

This can get a little messy….

And here is a little secret: you won’t die if you leave on some of the skin or don’t remove all of the seeds. Just make sure to get the blackened skin off.

Now you have some homemade-no-chemical-unprocessed  roasted sweet peppers!
