Happy What I Ate Wednesday!

Breakfast

Chocolate Shakeology!

I love my Shake-O. Made it this week with Chocolate Shakeology, Almond Milk, ground flaxseed, frozen blueberries, frozen bananas, and nut butter.

I recently discovered that the frozen blueberries make it taste even chocolatier. Hard to believe, but true. Yum!

Morning Snack

Toasted walnuts and apple slices.

I have recently become obsessed with toasted walnuts. They are so tasty, filling, and healthy. These were toasted dry in an oven and I always like toasting them on the stove with a little butter and salt. Divine!

Lunch

Roasted Butternut Squash and Turkey Salad.

Or as I like to call it:

Thanksgiving Salad

I work part-time at Orange Tree Imports which is a funky little cooking store in Madison, WI. As part of my job, I assist in cooking classes.

Yeah, I know it’s super rough.

This salad was made from leftovers from a class taught by Jean Kaminski. She roasted the diced butternut squash with maple syrup and then added dried cranberries for the last ten minutes. The dressing was made from apple cider, apple cider vinegar, mustard, shallots, and olive oil. I added the walnuts (as per her recipe) and heated turkey breast that I bought roasted from Trader Joe’s.

For dessert, I had some fresh strawberries and dark chocolate.

Afternoon Snack

When you are helping with a cooking class, it’s never a good idea to go hungry…

…so I grabbed a Cashew Cookie Larabar and an organic Fuji apple for the road.

Since receiving some Larabars from my Foodie Penpal,  I have been trying as many flavors as possible. I have to admit the Cashew Cookie was just a little too rich for me, so I only ate half.

Dinner

I am really bummed that I don’t have a picture for you. Bringing my camera is a little awkward when you are the lowly assistant.

I can tell you what I ate and that it was amazing, all thanks to Chef Kum Ng.

Shrimp Satay (grilled shrimp and mini sweet peppers) with a cashew curry sauce

Coconut treated rice with green beans, hard-boiled eggs, red onions, and asparagus

Mango Coconut Milk over Agar Agar 

One of the students did take a picture of this feast. I asked her to send it to me, so I will update the post if I get the pic in time.
