My husband and I pride ourselves on being healthy people. We eat a lot of salads, turn up our noses at most basic junk foods, and our masters at ordering things ‘on the side.’ But we most have one major guilty pleasure: fried pickles. 

When McClure’s approached me to do a pickle pizza, I had my doubts. Pickles on pizza?? They must be crazy. But after a conversation and thinking about the ingredients in question, I couldn’t help but ask why aren’t pickles on pizza everywhere?

Think about the pickles flavor profile: salty, crunchy, sour. Banana peppers? Pepperoni? Kalamata olives? All of these ingredients have made the great pizza divide, but not the humble pickle. Until now….

This pizza is light, refreshing, and innovative. Oh, and it’s EASY. Like really easy. Like throw together while sipping a glass of wine and chatting with friends EASY. And it’s novel. How many people have served you a pickle pizza? 

 

Fried Pickle Pizza
Light, salty, and oddly refreshing. And EASY. So easy that you should probably make it this weekend.

Ingredients
1 pre-made pizza crust
2-3 TB olive oil
1 TB minced garlic
1 TB Italian seaoning
3-4 TB parmesan cheese
3-4 TB mozzarella cheese
2-3 McClure’s Pickle Spears sliced thin
Ranch dressing, for serving

Instructions
1. Preheat the oven to 350 dg(F). Bake pizza crust for 3 minutes. Turn up heat to 400 (dg)F.
2. Whisk together olive oil, garlic, and Italian seasoning. Lightly brush onto pre-made pizza crust. Top with shredded cheese and sliced pickles. Bake for 12-15 minutes until top is brown and bubbly.
3. Serve with ranch dressing.

Notes
When brushing on oil mixture, less is more. You may have some leftover, and that’s okay. Just save it for your next pizza or to brush on some toasted bread!
Don’t want to mince garlic? Swap minced garlic and olive oil to garlic infused olive oil.
If using minced garlic, I like to mince garlic a head at a time and then cover with olive oil, then I can just scoop out as need. Way easier than mincing it for every recipe!
I prefer super thin pizza crusts. If you live in Madison, WI, check out Gino’s Deli pre-made pizza crust. It’s cracker thin perfection!

This pizza will be in regular rotation at our house this Fall. It’s easy, it’s light, and it reminds us so much of our beloved fried pickles minus the deep frying that we dare say that this pizza is healthy….

Okay, maybe not healthy, but it’s not not healthy. 

And it’s delicious. The two keys to this pizza are a super thin crust AND quality pickles, like McClure’s which are super crunchy and packed with flavor. 

You can find McClure’s pickles at Willy Street Co-Op and the crusts at Gino’s Italian deli. In a way, you can consider this pizza a love song to Madison and afternoons spent at musty town pubs cheering on your favorite team and eating deep fried pickles and other deep fried deliciousness. But this is easier, healthier, and homemade. In short, you can’t lose.
