We received our second week of our CSA last night. As promised, I am going to post my plans for the CSA produce each week. This week is a tad boring as we will use almost all of it for salads, but I am going to try a few new things to stir it up a bit.

Salad Mix, Spinach, Sorrel, Saute Mix, Watercress, Tatsoi–  I am going to mix all of this together to make one heck of a salad.

Radishes– I love radishes! This week I am going to eat them the French way with a little butter and salt. Yum!

Dandelion– This is a new one for me! I am going to chop some up with hard boiled eggs, olive oil and balsamic vinegar. I will let you know how it tastes.

Chives– In the freezer, these will go. I did make a lovely sauce with them last week that I served with salmon but I also imagine it would be good with celery and carrots as a dip. Mix 3 Tbsp of Chives, 1/2 cup creme fraiche and 3 Tbsp of horseradish. I dare you not to eat it out of the bowl.

Ramps– I think I am going to attempt to make ramp quiche this week. I am going to make the recipe a little easier by using a refrigerated pie crust. Shhh, don’t tell.

Lettuce Head– We are going to make Chicken Wraps. This is one of my favorite meals so I am super excited.
