Happy Healthy Blogger Thursday!

Today we are welcoming back Jessica as she highlights her awesome vegetarian blog, Best of the Veg. You may remember Jess from one of her guest posts earlier this year for her other blog, Cajunlicious. After reading Forks and Knives, Jessica and her husband decided to start including more vegetarian meals into their diets. Her Best of the Veg blog showcases everyday meals gone veggie.

Without further adieu, heeeerrrreee’s Jessica!

I so happy to be here today with my good friend Kimberly to share one of my favorite easy, delicious, natural, and healthy pizza recipes. I have been following, reading and enjoying Kimberly’s blog for some time now. Please, let me introduce myself: I’m Jessica, the girl behind the Best of the Veg blog. Best of the Veg is all about taking your favorite everyday meat dishes and turning them into delicious vegetarian/vegan and low-calorie meals while keeping the flavor for a healthy lifestyle. However, you don’t have to be a vegetarian to appreciate the delicious taste of these recipes.

Kimberly is such sweetheart and I am honored that she asked me to guest post. I adore her creativity in the kitchen and her recipes are fantastic in every possible way!

I hope you enjoy my Fresh Margherita Pizza!

This simple, fresh, and delicious pizza has become a favorite in our house. I was blown away the first time I made it. It is packed with flavor and low on fat.

Ingredients

Pre-made thin crust pizza dough, whole-wheat

My Amazing Red Sauce

2 Roma tomatoes, 1 seeded & chopped & 1 thinly sliced

Vegan mozzarella cheese

Extra virgin olive oil

Fresh Basil

Pizza/Baking Stone

Directions

Start by making the Red Sauce

Pre-heat the oven to 400 degrees

While the oven is pre-heating, remove the pizza dough from the container and spread it onto the stone. Brush on olive oil and bake the pizza dough for 8 minutes on the lower rack of the oven.

Remove from oven and top with the tomato sauce, chopped tomatoes, sliced tomatoes, and cheese. Bake for 15 minutes and cheese is golden brown. Remove from heat, slice, top with whole or ribbon sliced basil, and enjoy!
