Happy Healthy Blogger Thursday! 

This Thursday I have a blogger for you that I feel lucky to know. I met Soni through the a Love-Bloghop group. You may have wondered why I have posts titled Greenslove or Citruslove.  All of the love comes from the blog group. The Love-Bloghop is a super supportive and creative group of bloggers that create recipes based on monthly themes and then link them together. I have sat out the past couple of months but I can’t wait to jump back in for July’s theme: tomatoes.

Soni is super sweet and I love how she focuses on healthy meals with an Indian twist on her blog, Soni’s Food for Thought.  She is someone you want to bookmark, trust me on this. Her recipes are easy, healthy, and her photography is beautiful. I think you will really enjoy her recipe today.

Kimberly and I got to know each other when I joined our Love-Bloghop group! I’ve been a great fan of her healthy recipes and restricting the amount of processed foods is something that I also believe in. So when she asked me if I wanted to be featured in her healthy blogger series, I jumped with excitement since this was also going to be my first guest post!! Thanks Kimberly, I’m really honored!

For today’s post I thought of sharing something really simple and flavorful that would also be perfect for this season. Its the time of the year when schools are closed, there’s lots of gatherings, barbeques, picnics and everyone is in that mood to have fun!! But, when it comes to the food menu, you’re constantly on the lookout for that perfect side dish to go either with your burgers/meats /fish etc.…Well, this dish certainly fits the bill!! It makes for a great food for a crowd with minimal effort and maximum effect! It’s also a great substitute for the usual potato salad.

I love yams and I’m always looking for different ways to cook them.  I’ve used Japanese Yams in my salad here, but you can also use Sweet Potatoes.

Yam Salad with Balsalmic Dressing

The sweet balsamic dressing makes this salad come alive and the added veggies give it that extra crunch, perfect for dinner or brunch~

 

Yam Salad with Balsamic Dressing

Adapted from Southern Living

Ingredients:

Salad:
Japanese Yams (medium)-2 Peeled and cubed
Cooking spray
Salt
Thyme-2 tsp.
Yellow Pepper-1 diced
Green Chilli-1 chopped
Onion-1 diced
Basil-for garnish

Balsamic dressing:
Balsamic vinegar-2 tbsp
Prepared mustard-1 tbsp
Brown sugar-1 tsp
Extra Virgin Olive Oil-1/4 cup
Salt-1/2 tsp
Pepper-1/2 tsp

Process:

Preheat the oven to 400 degrees. Mix together the dressing ingredients.

Place the yams on a baking sheet. Drizzle with cooking spray and mix salt and thyme all over. Cook for about 30 minutes until fork tender.

Yam Salad

Mix all the veggies with the cooked yams. Drizzle the dressing all over. Garnish with basil and enjoy!!
