I want to report back on the arugula, mushroom and asparagus pizza. In short, yum! Because I made a slight mistake reading the directions (big surprise!), I actually made the pizza much lighter and non-greasy than if I would have followed Real Simple’s recipe to a T. Here is a link to the delicious recipe.
Now I have a bone to pick with Real Simple. Note how there are multiple steps within a step. That drives me nuts! I missed drizzling olive oil on top of the pizza. The result? This was a no-grease pizza. Score!
I also didn’t have a pound of pizza dough but I did have dough for one pizza, so I made it one big pizza. I think that resulted in having some extra toppings but we used the chopped asparagus and mushrooms on our salads which was excellent. And of course we ran out of arugula but I think Manatee and I both more than our fair share on our slices. When it came to leftovers, we had to improvise with spring mix but it was still really good.

With spring vegetables, ricotta cheese and parmesan, this is a perfect springtime meal.

You can see from this last picture why Manatee loved this meal. It’s like one big salad! And for me, it has pizza so that means I automatically love it. Manatee and I fought over these leftovers. This recipe will definitely be repeated and hopefully we will get some more fresh arugula from our CSA that we can use again.
