Vegan Cream

1 cup of cream = 1/2 cup of silken tofu + 1/2 cup of non-dairy milk

  1. Combine tofu and non-dairy milk in a food processor.
  2. Blend until smooth.

 

Recipe Review: The taste is very similar, perhaps a little less rich. The texture may be different. When I used it in Noah’s Kale Potato Rustica Soup, it seemed to separate but I also may have heated it too hot. For me, it was a great way to non-dairyiorize a dish and made it significantly healthier.
