This is my first time in participating in What I Ate Wednesday. I am kind of excited about it! Manatee and I are doing the P90x2 Nutrition Plan so we are focusing heavily on lean protein for this first phase. Here goes….

Breakfast:

This is my standard breakfast: scrambled egg whites (4-5 egg whites, splash of cold water, freshly ground pepper, garlic powder), Ezekiel english muffin with Earth Balance Vegan Spread, and ketchup. I LOVE this ketchup. No sugar or high fructose corn syrup, just agave nectar. Yum!

Lunch:

For lunch, I had a Shakeology shake. This is my new OBSESSION. I love it! I made this one with Shakeology powder, peanut butter with flax seeds, Almond Milk, a frozen banana, crushed ice, and cinnamon.

These shakes taste amazing (dessert in a glass!), keep me full and energized, AND it’s super healthy.

Snack:

Homemade beef jerky and water. For Christmas, I got Manatee a dehydrator and I have to say, he has already fine tuned a darn good beef jerky recipe. He seasoned the meat with terriyaki sauce, liquid smoke, Worcestershire sauce, Sirracha, and crushed red pepper.

Dinner:

For dinner, I had leftover grilled chicken tenders (from our Rose Bowl get together) on top of leftover spinach salad (spinach, arugula, red onion, apple, and craisin) with roasted mushrooms, walnuts, and Brussel sprouts.

Dessert/Night Snack:

Did you know cherries have a high level of melatonin? Neither did I until I read it in Women’s Health. It was a great sweet way to end the meal and get me ready for bed.
