You asked for it and here it is. A healthier sweet potato casserole. Actually, this is even easier than sweet potato casserole. I spent a lot of time reading recipes and after reading recipe after recipe, I decided a few things.

  1. I liked the idea of incorporating something salty or savory into sweet potatoes. I struggle with the sweetness of sweet potatoes. They are just a little too sweet for me, especially when you add brown sugar or (shudder) marshmallows.
  2. If I was going to add a sweet element, it needed to be natural.
  3. I am a very lazy person.
Number 3 is very important because number 3 made me simplify things into an almost embarrassing level.
Healthy Sweet Potato Mash
Makes four 1/4 cup servings
2 sweet potatoes, peeled and diced into 1/2 inch cubes
2 apples, diced into 1 inch- 1 1/2 inch cubes
1 tablespoon of grapeseed or olive oil
1/2 tablespoon of kosher salt

I am so lazy I didn't even peel the apples.

  1. Preheat oven to 425 degrees.
  2. In a medium bowl, toss apples and sweet potato with oil and salt.
  3. On a aluminum foil lined pan, spread out sweet potatoes and apples.

  4. Roast for 15 minutes.
  5. Transfer sweet potatoes and apples to a medium sized bowl (I say use the same bowl you used to toss them with oil and salt, why dirty another bowl?) and mash with a potato masher.
  6. Enjoy! You won’t even need to add butter!

Who needs marshmallow when you have naturally sweet apples?
