Two weeks ago, I promised a ramp Quiche. Confession: I had a bad eggs experience that week and crossed it off my list of meals. Because I love pizza more than anything else, I decided to make a ramp pizza. I did a lot of research but to be honest, nothing really fit what I wanted. At first I was going to try combine a few different recipes but then just decided to make up my own.

I wanted a light pizza with veggies as the centerpiece. I didn’t want a marinara sauce or a white sauce. To be honest, I wanted to go sauce-less. I couldn’t decide between putting veggies under or on top of the cheese, so I decided to do this as a full experiment and try both. And honestly, I knew this would lead to more leftovers which, when it comes to pizza, always makes me happy.

Veggie Stuffed Pizza

2 whole wheat pizza crusts (see Whole Food Pizza for a homemade recipe)

1 bunch of asparagus (approx. 2 lb), cut into 1-1/12 inch pieces

1 red pepper cut into 1 inch pieces

1 package of baby bella mushrooms cut into 1 inch pieces

1 bunch of ramps cut into 1/2 inch pieces

2 Tbsp of Balsamic Vinegar

1 Tbsp of Olive Oil

2-2 1/2 cups of cheese (Mozzarella, Parmesan, Romano)*

*I like these flavors, but pick the ones you like. I think the best texture comes from Mozzarella + 1 or 2 hard cheeses. I also recommend using full fat cheeses. They melt the best, are the most satisfying and you don’t have to use as much as you would if you used their reduced fat counterparts.

  1. Toss veggies with Balsamic Vinegar and Olive Oil.
  2. Spread veggies on crusts.
  3. Cover with cheese.
  4. Bake at 450 for 15-20 minutes.

NOTES:

  • You will probably have some leftover veggies. Add these to your side salad or set aside to eat on a salad for another meal.
  • As I mentioned, I tried both veggies on top and veggies under the cheese. I preferred the one with the veggies under the cheese. It seemed like the veggies were more steamed than roasted and it gave some moisture to the crust.
