I don’t know about you but suddenly I feel very busy. Days are getting shorter and schedules are getting more hectic. In times like these, the last thing I want to do is try a new recipe with a new list of ingredients that I have to find at the store. Instead, I want to incorporate my produce into dishes that I can make without a recipe.

So this week I want to talk about ways to incorporate your produce into everyday meals or at the very least, dishes you can throw together at a moment’s notice.

Here’s what we got this week:

Carrots
Zucchini/Summer squash
Cherry tomatoes
Tomatoes
Cucumbers
Celery
Green pepper
Onions
Lettuce
Garlic

Hamburgers– Hamburgers are a great way to incorporate vegetables, particularly if you have eaters who tend to shy away from veggies. Chop up some green pepper and onions to blend in with the meat. Serve your burgers with sliced tomatoes, onions and lettuce.

Taco Meat or Sloppy Joes– Like burgers, taco meat and sloppy joes are a great way to ‘hide’ the veggies. In addition to green pepper and onions, you can also add chopped garlic, zucchini, celery and carrots. Click here for an example.

Dips– Don’t underestimate the power of dip! Cut up the carrots, celery, green pepper and cucumber to serve with your favorite dip. Ranch is always popular. There are also many dairy free options: guacamole, hummus or roasted vegetable dip.

Easy Peasy Caprese– Caprese salad is traditionally sliced tomatoes, basil and mozzarella cheese drizzled with balsamic vinegar and olive oil. Make it even easier for yourself by buying the small mozzarella balls (boconccini) and tossing them with cherry tomatoes. Or you could grill your tomatoes before tossing them with the other Caprese ingredients. Yum!
