It’s no secret that I love cranberries and I am so excited that this month’s theme for the Love Bloghop is cranberries. So far, tons of great bloggers have contributed some sweet, tangy, and even savory cranberry recipes. Check out this post to read more about the bloghop and see a list of included posts.

This is one of my new favorite recipes. I plan to serve this at all of the holiday’s parties and use it as a hostess gift at every opportunity. Maybe if I am feeling really ambitious, I will go buy some of those cute little plastic bags to make it look even more fancy.

In addition to how easy and tasty this recipe is, I also love that you can adapt it to fit your tastes or even what you have in your pantry.

For this recipe, I paired sweet apricots with tangy cranberries, creamy almonds, and some salty peanuts.

White Chocolate Cranberry and Nut Bark

Prep time: 5 minutes * Total time: 15 minutes plus 1-2 hours for cooling

[1/2] white melting chips OR white chocolate chips*
[1/4] cup white chocolate chips
[1/4] cup dried cranberries
[1/4] cup dried apricots, sliced
[1/4] cup whole almonds
2 TB. roasted peanuts

I like the combination of white melting chips, but for a richer bark, you can use all white chocolate chips.

1. Spread out a piece of parchment paper on a plate or baking pan (whatever you will be able to fit in your refrigerator). Spread out nuts and dried fruit on paper.

2. Place chocolate in a double boiler. Heat until chocolate is melted and smooth, stirring constantly.

3. Pour chocolate onto parchment paper over the fruit and nuts.  Use a spatula to smooth chocolate over fruit and mixture.

5. Cool in refrigerator for 1 hour or until chocolate is set. Break into pieces and store in a cool, dry place. The bark can be stored for up to 1 week at room temperature.

I almost hope that my friends and family don’t read this post, because then they will realize how easy this recipe is to make. You get the chance to be Willy Wonka and design your own candy bar.

As you can see, I have a lot of fruit and nut overhang in my bark. I personally love that because for me, the white chocolate is an accessory to the dried cranberries, apricots, almonds, and peanuts. I love the combination of flavors and I also love it makes me feel that I am eating something that just may not be that terrible for me.
