This is a great recipe for ‘hiding’ vegetables. I have always loved my mother’s BBQ and she always made it with celery and onions. With all the produce from our CSA, I decided to see what other vegetables I could ‘sneak’ into it. Believe it or not, all of these vegetables were included in this classic sloppy joe comfort food.

Carrots for a little added sweetness

 

Green Peppers for a little zing

 

Celery for a little crunch

 

Sweet Onions for a little more flavor

 

With all these veggies, this could actually be a healthy recipe!

 

Yes I know, there is a lot of chopping required.

 

But don’t give up on me yet! This is a perfect recipe to make over the weekend and either eat it throughout the week or freeze portions that you can use during those super crazy weeks. We recently made a big batch to share with some friends who were expecting. There was enough for both of us to have a meal and freeze a few for the future.

 

Veggie Packed BBQ

2 lb ground sirloin
2 green peppers, diced
1 bunch of celery, diced
1 small bag of carrots, diced
2 onions, diced


Sauce:
1 1/3 cup ketchup
2/3 cup mustard
1/3 cup brown sugar
1 cup water
Salt to taste

*This was the first time I actually measured the sauce. Feel free to add the ingredients bit by bit and keep tasting to find the right balance of sweet, tomatoey and tangy that is right for you.

  1. Heat some oil on Medium Heat in a large frying pan or electric frying pan. You just need enough to cover the pan.
  2. Add vegetables and cover. Cook until soft, about 10-15 minutes.
  3. Add meat. Cook until meat is browned throughout.
  4. Add sauce ingredients and simmer for 15 minutes.
  5. Serve on a whole wheat bun, a slice of bread, with tortilla chips or over a spinach salad (like Manatee does). Enjoy!
