Happy What I Ate Wednesday!

What I Ate Wednesday is a weekly blog event in which bloggers share what they ate in one normal day. It is a day to celebrate that everyone eats and also a great way to learn about some new foods and dishes that are less special occasion and more day-to-day.

I love participating in it because I LOVE learning about new foods or new (and easy!) twists on snacks and meals that don’t require a big cookbook recipe.

My day started off a bit like this…

I tracked mud (unknowingly) throughout the house and then spilled my Shakeology smoothie down the side of the cupboards, myself, and in a large chocolate pool on our hardwood floors.

This was all before 7:30 in the morning.

I have to be honest, my day did not get much better.

But my attitude did.

Sometimes the only thing we can control is our attitude.

So I made myself have a MAJOR attitude adjustment.

And you know, I ended up having a good day despite the universe trying to push me in the other direction.

Breakfast

Every morning before we work out, Manatee and I have an untraditional pre-workout treat.

That’s right. We have a teaspoon of coconut oil.

This is probably a good time to mention that I am not a registered dietician or nutritionist.

But Manatee I do read a lot of books. Over and over, we read that coconut oil before a workout helps stimulate your body to burn fat throughout the day.

I can’t verify or deny that information with any type of authority, but I can tell you that it’s an indulgent way to start the day, I am no longer hungry during our 1-2 hour morning workouts, and I am not packing on any pounds.

So I am going to go ahead and stick with it.

Post-workout, I indulge in a chocolate shake.

 

To be technical, it’s Shakeology, and to be even more technical this was Chocolate Shake-O Part Deux since Chocolate Shake-O Part Un ended up down my cupboards, on my shirt, pants, slippers, and our hardwood floors. Good thing I adjusted my attitude or I might get mad remembering it.

Both shakes were made of: Chocolate Shakeology, almond milk, ground and regular flax seeds, frozen banana, frozen blueberries, and almond butter.

Have I mentioned recently how much I LOVE Shakeology? Well, I do. I know I am drinking all natural ingredients packed with nutrients that I need and even better, I feel awesome after I drink. I should also mention that it’s pretty much like drinking a milkshake.

Morning Tea

I have major problems with circulation. If I get chilled, my fingers go numb. This probably wouldn’t be such an issue if I wasn’t a writer who needs to be able to type. After trying to type with gloves on (oy difnt gp qrkl), I gave up and took a hot shower.  Then I treated myself to a cup of tea.

Raspberry Zinger.

Okay, so technically it’s an herbal infusion, but it still does the trick.

I finished up my work and then went to a grueling Master’s swim workout at the gym.

Lunch

For lunch, I had some leftovers from last night’s dinner: Roasted Chicken with Lemon, Mushrooms, Sweet Potatoes, and Apples. I am still fine-tuning the recipe, but it’s super easy, healthy, and delicious.

I had the leftovers over some spinach and topped with walnuts.

World’s Smallest Cookbook

I belong to BookSwim, essentially it’s Netflix for books.

I was super excited because Joy of Cooking was up next in my queue.

This was until I saw the version that I had apparently ordered.

Yup, a pocket-sized Joy of Cooking.

Can’t wait to curl up with that one!

Snacks

In honor of my mini book, I decided to eat my afternoon snacks in mini bowls…

Black Licorice.

I generally follow a clean-eating diet but black licorice is my kryptonite. Can you even make your own licorice?

I had two snacks today because I had one more workout left to do and I knew it would be awhile before I had dinner.

Blood Oranges and granola.

Perfect fuel for my hot yoga class.

Dinner

Manatee and I were way too excited to eat leftovers for dinner.

It’s kind of sad really.

Leftover cold Tofucotta pizza, spinach and argula salad, and leftover porcini mushroom soup.

And for dessert…

Alamos Torrontes wine and super dark chocolate (72% cacao).
