Hi folks! Thought I would take some time this Wednesday to share some pictures with you from this week’s meal plan and from a recent baby shower.

Meals this Week

veggie flabread

We started out with a veggie flatbread that I made on Sunday night. I had hoped to do one with asparagus, red peppers, mushrooms, and onions, but the only asparagus that Manatee could find at the store cost $9. Doh! We made do with (steamed) broccoli, cherry tomatoes, mushrooms, and onions. For a sauce, we just drizzled olive oil and Italian seasoning and then topped it with mozzarella cheese and Parmesan. We got the crust from Gino’s Italian Deli in Madison.

For the picadillo recipe, I wanted to use up the remaining dried black beans from our CSA. I recently purchased an electric pressure cooker from a friend who was moving. It was much less terrifying than a stove top pressure cooker.  A better picture would have been when I was releasing the steam: I had my oven mitt on, but then felt the need to crouch as low as I could and as far from the pressure cooker as possible. With my big belly, I am sure I looked ridiculous and it was completely unnecessary. As long as you don’t put your face in the stream of the steam, I am sure you would be fine. I will share some tips and more stories as I continue to use this new kitchen toy.

This was my first take at picadillo. If I do a separate post on this, it would be titled something like “101 Ways You Can Mess Up a Recipe Without Ruining It”. Usually my notes on a recipe include tips and modifications. For this one, it was all the ways I screwed up, and yet it was still pretty good. I can’t wait to try again with all of the knowledge I gained and the correct spices. Seriously, who doesn’t have cinnamon in the house? How could I let that happen?

Baby Shower

I wanted to share a few pictures from the baby shower we had last weekend, mainly because my best friend, Kristen, did such an amazing job with everything. Our theme for the nursery is letters and numbers, and she did an awesome job incorporating that into the shower.
