This will be my first Fourth of July that I will not be traveling up North to see my family and my nephews, Tyler and Riley. Instead, we will be breaking in our new deck with new traditions and new family members.
As odd as it is, Fourth of July is one of my favorite holidays. It’s a holiday with no stress, fireworks, and backyard BBQs. Berries abound with cold beers and wine in paper cups.
Here are some of my favorite summer recipes, perfect for a Fourth of July picnic. Enjoy!
Beer Burgers
This recipe is a combination of classics from Manatee’s and my childhood. At his house, his brother famously made leek burgers with beer and cream of leek soup. At my house, we made onion burgers with onion soup mix. Just like the union in our marriage, these burgers combine a little bit Manatee (beer) and a little bit Badger Girl (onion soup mix) for a perfect balance in these juicy burgers.
(B)BLT Salad
Growing up, summers meant BLTs. This recipe is a healthy take on the summer classic. Salty bacon, creamy mayo, spicy Dijon mustard, and sweet tomatoes. Perfect for a light summer lunch or a side for a Fourth of July potluck. No one will notice the added veggies or that this is healthy. I promise!
Poor Man’s Bruchetta
This dairy-free bruschetta is the perfect appetizer for summer grill outs. Sweet tomatoes and crunchy cucumbers complement the earthy hearty grain bread.
Blackberry Lime Pops
Remember when I was obsessed with homemade popsicles? After a summer of experimentation, this was my favorite recipe. Tangy blackberries with a twist of lime and very little added sugar. You can’t beat these for a super healthy dessert or refreshing snack.
Fourth of July Blueberry Pie
In my book, it’s not Fourth of July without blueberry pie. In this recipe, I use a pre-made crust which means you get all of the flaky goodness with no added mess or effort. Spices added unexpected warmth to this all American classic.
