Amidst the craziness that has become our lives pre-baby, meal-planning has provided a certain oasis. This week our nightly schedule has opened and I’m excited that we get to try some new recipes and revisit some old favorites. Even I can admit that without committing to meal planning in a public forum, we may have ended up eating take-out this week. Our weekend was rushing to and from events, we had our first birthing class last night, and today we have been struck with a snow storm. Luckily, I took the time to find some recipes that worked with all the basics we keep on hand, so there are no excuses to hide behind.

Now, a quick note about pre-baby craziness. We have two goals for this month: get stuff done around the house (including new carpet and major organization) and learn how to have a baby. Yes, we are enrolled in birthing classes because Manatee and I are realizing how clueless we are about having a baby. After the first night, I can tell you, ignorance is bliss. We thought we were scared before, but after watching an emotional natural birthing video, we are officially terrified.

On happier pregnancy news, I wanted to share with you a current craving that has turned into a new Badger Girl recipe. Here’s your hint:

Meal Plan:

Red wine marinated flank steak and mushrooms: I had some leftover flank steak from the fajitas I made a few weeks ago and decided to improvise a little with some ingredients I had on hand. I marinated the steak strips in 1 [1/2] cups of red wine with approximately 2 tablespoons of Pizza Seasoning for 8 hours. For the final hour of marinade, I added some mushrooms and sauteed them in a large frying pan. We had them on a salad with roasted Brussel sprouts. Our camera was broken for a few days so no pics, but it was quite tasty and I hope to make it again.

Asian Turkey Meatballs with Carrot Quinoa: We just stocked up on frozen local meats at Metcalfe’s including some ground turkey. As I was looking through my binder of recipes, I came across this recipe from Everyday Foods and realized that we had all the ingredients. We will be subbing quinoa for rice and possibly some other substitutions in the sauces we use, but I’m excited to try it.

Baked Egg Whites in Chunky Tomato Sauce– Along with peanut butter, chocolate, and bananas, I have also had major cravings for eggs/egg whites. I must eat them at least once a day. This recipe has three of Manatee’s favorites in it: egg whites, tomato sauce, and spinach. I am sure it will be a hit (thanks to Martha) and I am sure we will eat it over a bed of spinach.

Fish Tacos: It’s been way too long since we have made these amazing fish tacos.

Chicken Soffrito: Martha is coming through for us yet again with this recipe. This will give me a chance to test Lombardino’s recipe for soffrito and practice breaking down a chicken, a skill I need to master for that cookbook.

Nutty Bran Flakes: Over the weekend, I somehow found time to whip up a batch of bran flakes. It was so much easier and tastier than I expected! Coupled with my recent batch of homemade granola/muesli, I have developed Badger Girl Cereal Version 1.0.

It will be the first of many versions, because I can’t wait to have fun tweaking these two recipes. Making your own cereal is way easier and tastier than you could imagine. I hope to have the recipes up soon.
